I've always liked salsa.  Odd considering I don't like tomatoes (raw at least) but I've rarely met a salsa I didn't like.

But there is something about the tomato-less mushroom salsa that they serve at our favorite Mexican restaurant that I can't get enough of.  Seriously, I'm thinking I could spread it on toast for breakfast if I could figure out how to make it at home.  Or steal a large vat of it from the restaurant.

It seems simple enough - chopped mushrooms, lime juice, onion, cilantro, a little chopped jalapeno.  I could probably improvise, but I recently found this recipe on Pioneer Woman (amazing recipes if you haven't checked her or her book out) and I'm determined to make it this month.  The recipe isn't Pioneer Woman's (she has a recipe share site called Tasty Kitchen) but I figure it's worth a try.  Sans-carrots of course - that's just weird.
