logan lunch update

I'm happy to report that we have made some good progress.  Before I get to that progress, I wanted to share a new link I stumbled upon.



Back to the update.  Here are the lunches we've been bringing lately:

1. Pasta Salad - why didn't I think of this earlier?  I use SmartTaste pasta (high fiber/protein/calcium) with light Italian Dressing and Salad Supreme seasoning (love that stuff).  Then I add in cheese chunks (when desperate, cut up string cheese) and whatever veggies I have handy.  This week's I had red, orange, and yellow bell pepper and cucumber.  I almost always have peas, carrots and shelled edamame in the freezer so that goes in often.  Sometimes black olives.  He seems to really like it!  And I can mix up a batch that will last a few days.

2. Auntie Tam made us some awesome Italian Wedding Soup - extra too so we froze a bunch of individual containers.  I'm saving those for the cool weather days. :)  It even has alphabet pasta!

3. Sandwich rollups - I'm getting mixed reviews.  Some days Logan loves these, others he won't eat them.  I use a tortilla (usually the Life Balance Omega 3 ones by Mission), spread on veggie cream cheese, layer ham or turkey and add in cucumber or pepper sticks, avocado, and/or spinach.  Then roll it up!

I'm happy to say that crackers have only made it into Logan's lunch once this month!  We are going to keep working on it and keep reporting!  Let me know if you have any other ideas.
